Raizel Harkavy; Entertainment

Yields: 24 Cookies

Prep Time: 30 Minutes

Bake Time: 10 Minutes

Total Time: 40 minutes

Ingredients:

  • 8 tablespoons of margarine or butter

  • 2 cups of flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1 cup of sugar

  • 1 large egg

  • 1 teaspoon of vanilla extract

  • 2 tablespoons of orange juice

Directions:

  1. Pre-heat the oven to 375°F.

  2. Set the margarine/butter out at room temperature to soften for 15 minutes.

  3. Line some cookie sheets with parchment paper, and set them aside.

  4. Add the sugar and margarine/butter into a mixing bowl, and mix them until they are soft and fluffy. Add the egg, orange juice, and vanilla, and beat them until they have thoroughly combined.

  5. In another bowl, mix the flour, baking powder, & salt.

  6. Add the dry ingredients to the wet ingredients, and mix until they are well combined.

  7. Place the dough onto a sheet of parchment paper, and place another sheet on top. Roll the dough with a rolling pin, until it is about ¼ inch thick. Remove the top sheet, and cut out your cookies. Using a spatula, transfer them to the prepared cookie sheets. Re-roll the scraps of dough and continue cutting out cookies until the dough is used up. If the dough becomes too soft, place it in the refrigerator until it firms back up.

  8. Spray the tops of the cookies with a nonstick cooking spray.

  9. Place your spatula or fork on each cookie, sprinkle them with sanding sugar, and remove your tool carefully.

  10. Place your cookie sheet in the oven, and bake for 10 minutes. When the cookies have finished baking, take them out of the oven, and let them cool down. Repeat this with the rest of your cookie sheets.

  11. Enjoy!
